Mojama – Air-dried Salted Loin of Yellowfin Tuna
Mojama is salted, air-dried Yellowfin tuna loin from Spain.
It is completely natural with no added artificial preservatives or colourings.
Mojama is most often served in thin, almost translucent slices, drenched in only the very best extra-virgin olive oil, accompanied by roasted Marcona almonds, green olives, and a glass of white wine or a short beer.
Elsewhere it has been seen finely grated over a plate of lightly oiled spaghetti, with a bit of chopped parsley and a glass of red wine.

Mojama also makes a superb and simple mid-afternoon tapa. You spread chopped ripe tomato and chopped raw garlic over the surface of a thin slice of bread and place a very thin slice of Mojama on top.
However you decide to use it, the culinary possibilities of the subtle but unique flavour of mojama are endless. While mojama is still a largely undiscovered delicacy outside of Spain, it has been recognised by specialty stores worldwide for years and is slowly entering more mainstream markets as the demand increases.
Our Mojama is produced by Salazones Garre, S.L., a family of artisans who prepare traditional salted fish products using the finest tuna and sea salt.
Mojama is made by curing the tuna loins in San Pedro del Pinatar salt salt for two days. The salt is then removed, the loins are washed and laid out to dry in the sun and the breeze (according to the traditional method) for fifteen to twenty days. Exposure to the salt and coastal breezes renders the flesh luscious, firm, and a deep reddish brown, while developing its unmistakable flavour.
Yellowfin tuna is full of goodness. It has a very high protein content, is a good source of vitamin D and Omega-3 oil, and is low in fat and carbohydrates. Perfect for people who practise sports or anyone who wants to follow a healthy, nutritious diet.
